A classic Sunday roast staple. Juicy, tender chicken with crispy golden skin, infused with lemon and thyme.

Ingredients
- Whole Chicken1.5 kg
- Butter50 g
- Thyme1 bunch
- Lemon1 whole

- Roasting tray
- Chef's knife
- Cutting board
- Basting brush or spoon
- Meat thermometer
Method

Preheat the oven to 200°C/180°C fan.
Approx. 5 minutes

Halve the lemon and ensure the butter is soft.

Place the Whole Chicken into the roasting tray.

Rub the chicken all over with the Butter and season generously.
Approx. 5 minutes

Scatter the Thyme over the chicken and stuff the cavity with the Lemon halves.

Place in the oven and roast for 30 minutes.

Remove from oven, baste the chicken with the pan juices, and roast for a further 45 minutes.

Check the internal temperature (it should reach 75°C in the thickest part).

Remove from the oven, cover loosely with foil, and let it rest for 15 minutes.
